Fed exclusively on acorns and pastureland, subjected to the action of salt and subsequently to a drying and maturation process in a cellar that gives the product special characteristics in terms of its flavor, aroma and texture.
The 50% Iberian acorn-fed ham contains a greater amount of infiltrated fat, which gives it a characteristic taste highly appreciated in haute cuisine.
The fat in Pata en Tierra 50% Iberian acorn-fed ham has a high percentage of monounsaturated fatty acids, especially oleic acid, similar to those found in olive oil and which help maintain an adequate level of cholesterol in the blood.
