What percentage of bone is in a ham or shoulder?

Approximately 40% of the weight of a ham corresponds to the bone and 30% in the case of shoulder hams.

 

How can I preserve the product?

Hams and shoulders don't need refrigeration, so there's no need to put them in the fridge. Simply wrap them in cling film to prevent them from drying out, then cover them with a cotton cloth and keep them in the darkest possible place.

 

For cured meats and sausages, store in a cool, dry place before opening. Once opened, we recommend allowing the product to come to room temperature before consumption and then storing it at a temperature between 2 and 8 degrees Celsius.

 

What about vacuum-packed, hand-cut, or machine-sliced products?

In this case, you can keep them in the refrigerator until you're ready to eat them. A few minutes before eating, we recommend running them briefly under warm water without opening the vacuum bag. Then, you can open the bag and place them on your plate. This will quickly bring the product to room temperature and restore its full aroma and flavor.
