Iberian acorn-fed salchichón is a product made with the lean meat of acorn-fed Iberian pigs. Its production process involves mincing the lean meat into very fine pieces, seasoning it with spices, and then stuffing it into natural casings.

The proportions of the different ingredients were chosen from the best traditional cured meats made by hand in the slaughtering of the area, and kept as one of the main treasures of Pataentierra.

When sliced, Iberian salchichón displays a deep purplish-red color, speckled with reddish-white. Its exquisite quality and artisanal production give it a fresh, cured aroma and a blend of specific nuances from the spices used.
